I’ve worked on one during a desperate time in my life, and worked full time, whenever my employer required, with basically no employment rights/protections. Lots of places use them as a loophole for I employ full time staff and sidestep employment law (I was working in a factory with about 600 people on zero hours contracts who needed full time work and not one of them was secure or happy with their situation)
